Day 23 of my Raw Food Fast and these zoodles hit the spot. (okay – admittedly twice as I made this last night and went for a replay today)
Is it truly reminiscent of flavor of pasta?
No. Not at all.
Does it give you that fun, noodle-y flair and serve as a twisty vessel for sauce?
Absolutely!
Raw zucchini noodles can be a great pasta alternative when looking to reduce calories and/or find interesting ways to get more vegetables (with all those wonderful phytonutrients) into your diet.
While spaghetti would be the most obvious alternative, I really enjoyed the flavor of this dish, especially when hit with a touch of hot sauce. Mmmm!
Ingredients
2 medium Zucchini
2 cups Broccoli or any Vegetable of choosing (*peas are a bangin’ addition to this dish)
1/2 Avocado
2 tsp Shawarma Seasoning, or to taste
Pinch of Maldon Flaked Sea Salt, or whatever you have
Instructions
Mash avocado with a fork, mixing in your seasoning.
Trim ends from the zucchini and run through a spiralizer. Place in a large bowl with your mashed avocado and broccoli or vegetable of choice. Toss to combine.
Serve immediately or give it maybe 5 to meld then enjoy. (Note: letting it set for a bit with the sat on the zoodles will cause them to soften by releasing water (good for a nice creamy dish) but letting it set too long can cause it to release too much, making it just wet (not so good).
