Quick Cuke Salad

 Fresh and Refreshing can hardly get any faster or easier.  Total chop’n’go action here…

Ingredients

4 Cucumbers, peeled, quartered lengthwise and chopped

4 Green Onions, sliced

1 Large Tomato, diced

1 Red Pepper, diced

1/2 Head of Romaine, chiffonade

4 tbsp Extra Virgin Olive Oil

4 tbsp Red Wine Vinegar

Salt & Pepper, to taste

 

Preparation

Place all ingredients in a large mixing bowl and toss to combine.

 Serve and enjoy immediately.
