Cinnamon Apple Steel Cut Oats

{Crock Pot & Stove Top Method Below}

Ingredients

1 Cup Steel Cut Oats

2 ½ -3 Cups Water

1 Cup Almond Milk

2-3 tsp Cinnamon

Pinch of Salt

2 cups Chopped Apples

¼-½ Cup Maple, Honey, or other sweetener of choice, reserved

1 Tbsp Coconut Oil (optional if preparing via stove-top method)

Crock Pot Instructions

The night before, place all ingredients except maple a 1.5 qt slow cooker.  (Adjust water to desired consistency.  Using 3 cups water in the crock pot, oats are thinner/wetter so, if you prefer it drier, scale back on your water.)

Stir and set slow cooker to low and leave to cook over night.  When you wake, stir in maple and serve hot.

Stove Top Instructions

In a tea kettle or small pot, bring 3 cups of water to a boil.  Meanwhile, place oats, cinnamon, salt and oil in a medium pot and stir to evenly mix.  Lightly toast oats approximately 2 minutes.  Swirl or stir them in the pot, being mindful not to scorch them.

Add apples.  Pour water over oats and reduce to a gentle simmer.  Allow to simmer uncovered 15 minutes.

Add almond milk and maple.  Continue to simmer approx. 8 minutes then remove from heat and serve hot.  Oats will thicken upon cooling.
