Blushing Bruschetta


2 Medium Tomatoes, diced, excess liquid discarded

1-2 Garlic Cloves, minced

1 tbsp + 1 tsp Fresh, Finely Chopped Basil Leaves

2 ½ tsp Fresh, Finely Chopped Oregano

2-2 ½ tsp Red Wine Vinegar or Balsamic Vinegar

1 tsp Extra Virgin Olive Oil

¼ – ½ tsp Fine Sea Salt

Pinch of Stevia (optional)

Pepper, to taste


Place all ingredients in a bowl and stir until well combined.

Cover and refrigerate for 15 minutes or longer to allow the flavors to meld.

Enjoy over toasted slices of baguette, organic whole wheat crackers, slices of a raw wheat berry baguette or your favorite basic raw cracker.  This is also delicious served over zucchini or whole wheat pasta.
