Dessert Hummus x 3

So, I’m not exactly the “genius” that came up with the idea of making a dessert out of one of my favorite foods, the ever-scrumptious hummus. However, I am the mom that knew better than to pay so much for a hummus I could make from scratch with very little effort and much less expense (on top of knowing every sweet little organic ingredient that went into mine.)

Here are 3 basic recipes that can easily be mixed, matched and modified to create limitless possibilities. Yum up and enjoy!

*This makes for a pretty large batch as our household goes through it crazy fast. If needed, this recipes should be easily made by half to scale it down.

Vanilla

3 cups Chickpeas
1/4 cup Maple, Honey or Agave
2 tbsp Extra Virgin Coconut Oil
2-4 tbsp Almond Milk
2 tsp Vanilla Extract
Pinch of salt

*Note, the maple will be bomb but will impart a distinct maple flavor alongside the vanilla
**Make this one divine by subbing out the coconut oil for 1/4 cup of cashew butter.
***Serve this on most any fruit (Crazy good on strawberries!!) or throw a smudge on these Carrot, Apple & Date Muffins for a total dessert loaded with those daily fruits and veg!

Cinnamon

3 cups Chickpeas
1/4 cup Maple, Honey or Agave
2 tbsp level Ground Cinnamon
2 tbsp Extra Virgin Coconut Oil
2-4 tbsp Almond Milk
1 tsp Vanilla Extract , optional
Pinch of salt

*Maple should be a given here. Just saying…
**Add a really interesting twist to this one by subbing the coconut oil with 1/4-1/3 cup (or more) pecans
***PEARS!!! This one is so delish on pears!

Brownie Batter

3 cups Chickpeas
1/4 cup Cocoa Powder
1/4 cup Maple, Honey or Agave
2 tbsp Extra Virgin Coconut Oil
4-8 tbsp Almond Milk, to achieve desired consistency
1 tsp Vanilla
Pinch of salt

*Note, the maple will be bomb but will impart a distinct maple flavor alongside the vanilla
**Make it Mayan by throwing in a bit of cinnamon and cayenne or go a whole new direction and give it a PB or almond butter swirl.


Instructions

  1. Place all ingredients in food processor or high speed blender (you’ll need a solid blender for this job).
  2. Puree all ingredients until smooth.
  3. Place in an airtight container and refrigerate up to one week.
